and the warp signatures you were seeing were likely from your own ship.

This is exactly what I have observed too, the rate of the starmap updating warp signatures is slower than you are able to exit/enter systems.
Solution could be to simply omit warp signature to own empire, but not to other empires allowing cat/mouse chasing.
