The "Universe Totals" on the http://hazeron.com/EmpireStandings2015/E...dings.html page says "Solar Systems 666'021".
As for how many solar systems there actually can possibly be in the current universe, or more specifically the how many solar systems are in the Shores of Hazeron galaxy. That might not be a number we have, since it would require all sectors in the galaxy/universe to have been generated.
